We are in a land (Rota, Spain) with a very good eggplant so we take advantage of the productsthe land gives us , and as some body gave me these two eggplants i´m going to make those with the eggs.
Ingredientes:
2 cucharadas de aceite oliva
2 berenjenas
2 huevos
4 dientes de ajo
sal y pimienta.
En una sartén calentamos el aceite y añadimos el ajo picado. Cuando el ajo empieza a coger color añadimos las berenjenas escurridas y lo revolvemos durante un par de minutos.
Ya solo nos queda añadir un poco de sal, revolver, añadir los huevos y dejar que se hagan revolviendo de vez en cuando.

Wash and cut the eggplant into cubes and boil in salted water for about 10 minutes. Drain them and reserve.
In a frying pan heat the oil and add the chopped garlic. When the garlic begins to brown, we add the drained eggplant and stir for a couple of minutes.
Now we only have add a little salt, stir, add the eggs and let them make stirring occasionally.
